How long can I store kimchi?
Our kimchi can be stored in a jar for over 6 months.
However, kimchi has a long shelf life even when not canned. You can store kimchi in your refrigerator for longer than 6 months and not have any worries about it going bad.
Depending on your taste preferences, you may not like kimchi the longer it ferments. If you prefer fresh kimchi we recommend keeping it for about 6 months.
While stored in the fridge, kimchi continues to ferment over time. The longer it sits the more fermented it will become and the taste is constantly changing for that reason.
